The only program of its kind in the state of Kansas, the Department of Human Nutrition discovers, disseminates and applies knowledge to promote improved food choices, nutritional status, and well-being of people. The vision of the Department is to enhance the well-being of people by promoting informed food choices and optimal nutrition.
The Department provides comprehensive education, research and extension programs in human nutrition and sensory analysis. This is done through a focus on:
- Nutrition and physical fitness
- Bionutrition and functional foods, with an emphasis on basic and applied approaches to molecular biology, consumer behavior and sensory analysis
- Public health nutrition and nutrition education

The department also offers an assortment of distance education courses.
Research is conducted to improve food quality and promote optimal health through understanding of nutrient metabolism and dietary behavior.
