- Complete and document 400 hours of industry work experience.
- Complete a job related project.
- Answer internship management questions.
- Complete assigned correspondence with Career & Employment Services.
- Make an oral presentation of internship experiences to faculty, students, and employers after internship.
Items Employers Should Know About Student Internships
Complete and document 400 hours of work experience.
Students will need to document (with pay stubs or a letter from their immediate supervisor) dates and amount of hours worked in order to fulfill the 400 hour requirement.
Complete a job-related project.
Many times managers and supervisors need assistance in completing in-house assignments. All students must complete a job-related project approved by their supervisor. The objectives of this project are to:
- Increase student’s understanding of the business.
- Assist the sponsoring organization with in-house projects.
- Gather data and analyze information.
The goals of the project may be to cut costs, increase sales, or correct a problem. Students should discuss the project with their immediate supervisor and identify a job-related project they can assist with. Students should utilize quantitative analysis and other information-gathering procedures to help them understand the issues and make recommendations to improve quality in the organization or business. Please note: the job-related project assignment does not need to correct or fix a problem. The objectives are to increase your understanding of the business, assist the sponsoring organization, and analyze information in a professional manner.
Examples of projects that have been completed in the past:
- Analyze over production or under production of menu items.
- Plate waste analysis
- Labor analysis
- Analysis of contribution margins for food or beverage sales
- Analysis of occupancy patterns for the purpose of developing strategies for increasing sales.
- Food cost update for entrée menu items.
- Analyze menu sales.
- Analysis surrounding banquet competition.
- Meat yields analysis.
- Develop an employee incentive program.
- Compare cost of purchasing uniforms versus rental.
Answer management internship questions.
All student interns must complete the Management Internship Questions as outlined in the class syllabus if not completing an official “manager-in-training” program (MIT), including a management “task book” as part of their internship program. Students must make arraignments to meet with the general manager or food and beverage manager to discuss their management philosophy, their secrets of success, and advice for students.Additionally, students completing food and beverage internships will be required to complete a series of questions relating to the operation and organizational policies. Likewise, students completing a hotel internship will be required to complete hotel-related management questions. These questions are designed to help the student think critically about the operation and organizational policies. Make an oral presentation.
All students returning to campus after completing their field experience will be expected to present a 15-minute presentation about the internship experience. Employers are welcome and encouraged to attend. Please contact Pat Pesci for scheduled times.
