Medeiros updates FDA scientists

Denis Medeiros reported on omega-3 fatty acids recently during “Grand Rounds” presentations at the Food the Drug Administration to update scientists and regulators on current research on potential toxicities of functional foods being marketed.
His topic was “A case study on the use of omega-3 fatty acids in meat and processed meat products.” He has published on lipid and fatty acids as they related to food quality and health.
The eight invited presenters represented think tanks, watch-dog organizations and universities, Medeiros said. Other topics included garlic, pysllium, legal aspects of functional foods and the risks of amino acids in sports beverages.
Medeiros is department head and professor in Human Nutrition as well as associate dean for scholarship and research.
