Delores Chambers . . .serves green tea. Dr. Chambers won first place for her paper entitled “Descriptive Sensory Analysis of Green Tea Samples from around the World” in the Marketing and Industry category of the third International Conference on Tea Culture and Science (in Shizuoka Japan). While there she got an invitation from universities in both China and Turkey to conduct collaborative research. She and Dr. Edgar Chambers IV direct the internationally recognized Sensory Analysis Center in the Human Nutrition department.
Emily Taylor. . . will serve on the 2008 Homecoming Student Committee. The committee organizes Homecoming Week, which will be Oct. 19-25 and culminate with the football game against the University of Oklahoma Oct. 25. Emily is a junior in nutrition and exercise science .
Linda Yarrow, Tina Remig and Mary Meck Higgins . . . publish once, twice. The three had two papers on food safety awareness accepted by peer refereed journals recently. They are “Concerns, practices, and openness to change of college students with health and non-health majors” in the Journal of Food Protection Trends and “Food safety educational intervention positively influences college students’ food safety attitudes, beliefs, knowledge, and self-reported practices” in the Journal of Environmental Health.
Deborah Canter and Jane P. Marshall have been awarded a Center for Engagement and Community Development engagement incentive grant for their project, “Biscuits and Bison: Great Plains Foodways Connection.” Dr. Canter is professor and HRIMD department head. Marshall teaches Food Writing and Development of American Cuisine in the department.
The $15,000 grant seeks to explore the development of The Great Plains Foodways Connection, an organization dedicated to identifying, conserving and celebrating the state’s foodways and its contribution to the American culinary tapestry. This mission will be achieved through scholarship and education by hosting public events, developing archival resources, generating publications and sponsoring original research.
Heesup Han . . . earns publishing award. The graduate teaching assistant, who earned his doctorate from HRIMD, and Ki-Joon Back have been honored by the Journal of Travel and Tourism Marketing. Their article, “Assessing Customers’ Emotional Experiences Influencing Their Satisfaction in the Lodging Industry,” published in Volume 23, Issue 1, was selected as the winner for the Martin Oppermann JTTM Best Article of the Year 2007 Award.
The award is conferred annually as a tribute to the late Dr. Martin Oppermann and to promote excellence in tourism research. The article was selected by the journal’s editorial board based on four criteria – originality of concepts, methods, and/or contribution; sophistication of conceptual development and/ or methodology; clarity of writing and overall contribution to the field of travel and tourism marketing.
Sang Lee and Chihyung Ok. . . propose aging initiative. Lee, a graduate student in HRIMD, and Dr. Ok have received $3180 from the Perry and Virginia Peine Excellence for Aging Initiative for their proposal, “Foodservice employees’ job satisfaction and dissatisfaction in continuing care retirement communities.”
