Update: faculty publishes, presents

Faculty and graduate students in the College of Human Ecology continue to display their expertise and research in publications and at the podium. Here are a few of the latest:

John Grable, along with D. D. Klock and R. H. Lytton wrote “The case approach to financial planning: Writing a financial plan,” published in Cinncinnati, OH., by The National Underwriter Company. Grable is professor in Family Studies and Human Services.

Edgar Chambers IV and Jane Garcia published an article in the September issue of the Journal of the American Dietetic Association about the preparation of thickened beverages for patients with dysphagia and the need for objective measurements with application to clinical settings. This cross-sectional study examined the line spread test (distance a liquid flows) to determine reproducibility of the measurements and whether specific line spread measurements can differentiate nectar- and honey-like thickness levels in the National Dysphagia Diet, according to the abstract. Chambers is distinguished professor and director of the Sensory Analysis Center; Garcia is associate professor in FSHS.

In the November 2008 issue, Rebecca Gould and Deb Canter offered a commentary about food and nutritional professionals in management. Gould is on the HMD faculty; Canter chairs the department.

Jana M. Hawley published “The economic impact of dumping clothing” in “Sustainable Fashion. Why Now? A conversation exploring issues, practices and possibilities,” a book of commissioned essays by Fairchild,  Connie Ulasewicz and Janet Hethorn editors. Hawley is professor and department head of Apparel, Textiles and Interior Design.

W. Kim, Chihyung Ok and M. J. Lee presented “Antecedents of service employee’s organizational citizenship behaviors in foodservice businesses” at the 13th Annual Graduate Education and Graduate Student Research Conference in Hospitality and Tourism, Orlando, Fla. Kim is a graduate student and Ok is assistant professor in Hospitality Management and Dietetics. Lee is a May 2005 doctoral graduate now at California State Polytechnic University.

E. Yoon and Carol W. Shanklin presented “Application of protective motivation theory at assess foodservice operators’ intention to implement a food defense management plan. At the 13th Annual Graduate Education and Graduate Student Research Conference in Hospitality and Tourism, Orlando, Fla. Yoon is a December 2007 doctoral graduate now with Samsung Everland Inc. Shanklin is interim dean of the Graduate School and on the HMD faculty.

W. Phillips, K-J. Back, and Deborah D. Canter authored “Social image congruence and tourists’ visiting intention to conspicuous destination” offered at 2008 International Council on Hotel, Restaurant and Institutional Education Annual Conference, Atlanta, Ga. Phillips is a graduate student. Back was an assistant professor in HMD until 2006 when he joined the University of Houston. Canter is professor and head of Hospitality Management and Dietetics.
