Ahdikari to profile beef flavor

Koushik Ahdikari has been awarded a $36,500 grant from the National Cattlemen’s Beef Association to establish the flavor profile of beef. Edgar Chambers IV, director of the Sensory Analysis Center, will work on the project to develop a lexicon for beef that can be used universally.

While on a Big-12 Fellowship at Texas A&M University, Adhikari worked with Rhonda Miller, a meat sensory scientist who shares the grant.

Ahdikari is an assistant professor in human nutrition.
