Food-Borne Illness: High Stakes Health Threat for Older Adults
Recent highly publicized food recalls and consumer warnings focus attention and interest on the safety of foods. Older adults (as the fastest growing segment of the population) are becoming the predominant group at risk for FBI. The interplay of personal hygiene and proper food handling, preparation, and storage determines food safety and impacts the prevalence of food-borne illnesses (FBI). Few studies have specifically examined food safety knowledge and practices of community based older adults and those working with older adults have sometimes described resistant attitudes and unsafe food handling/storage behaviors. Recognition of food safety attitudes and behaviors in this population are needed for appropriate education and risk reduction.
